Pistachios are a premium, high-value nut — every broken kernel and every stale pack is expensive. Gentle handling through dosing and forming protects whole kernels, while nitrogen flush and high-barrier film preserve the oils that carry flavour. Portion sachets and stand-up-ready formats serve the gift and snack segments. The difficulty is mechanical and chemical at the same time: kernels and in-shell nuts differ in size and shape, so the product flows freely but never uniformly, and long drops or sharp transitions split shells and crack kernels. The fines that result travel straight into the seal area, where they are the most common cause of a leaking pack. Roasted and salted product carries surface oil and salt dust that build up on contact parts. The fat that gives pistachios their flavour is also what oxidises, and an opened barrier costs the product its bite as soon as the kernels take up moisture. Dosing is therefore chosen for gentleness rather than force. Volumetric cup dosing fits a free flowing granule of this kind: the product falls by gravity into a set volume and nothing rotates against the kernel. Auger dosing belongs to powders and would grind whole nuts, so it has no place on a pistachio filling machine. Where piece size is mixed and the product is expensive per kilogram, weighing is preferred, because giveaway against a declared fill weight costs real money on every pack. Bulk density shifts with kernel grade, roasting and salting, so the dose is re-established for each recipe rather than carried over from the last run. Formats follow the market.
