Salad dressings are emulsions with oil, acid and particulates — three separate packaging challenges in one recipe. Left standing, the oil and water phases separate, so a hopper that is not kept moving delivers a fat-rich first shot and a thin, acidic last one from the same nominal volume. Herbs, cracked pepper, garlic and cheese solids settle at their own rate, and every pack has to carry them in the proportion the recipe specifies rather than whatever sits near the outlet. The acid load works on contact parts and seals, while free oil migrates into the seal area and into films not chosen for it. Agitated hoppers keep phases mixed at the nozzle, acid- and oil-resistant films protect flavour, and shut-off nozzles hold the seal area clean. Dosing is volumetric on the liquid side: an agitated hopper feeds a positive-displacement metering unit, and each cycle pushes a measured volume through the nozzle into the pack. The volume is set mechanically rather than by how freely the product flows, so a thick emulsified dressing and a thin vinaigrette run on the same stroke, and viscosity shifts with room temperature barely move the fill weight. Flow paths and nozzle bores are sized above the largest particle so herbs and pepper pass without bridging, contact parts and seals are specified for acid and oil, and the shut-off nozzle cuts the product at the end of the stroke so no oil string falls across the sealing jaws. On a salad dressing filling machine that last detail governs the leak rate. Portion sachets for food service and meal kits are the leading format. Stick pack suits single servings that travel — a meal kit tray, a delivery order, a pack beside a salad bowl — and opens with one tear. Sachets sealed on three or four sides give a wider printable face for retail multipacks, hotels and catering, and take the larger portions used at salad bars and QSR service. Typical dose is 10 to 20 ml per pack. These are multi-lane machines, so lane count follows pack width: MSM1200 reaches up to 960 packs per minute with a narrow pack on 12 lanes, while the same machine gives 480 packs per minute in a wider pack on 6 lanes.
