Cappuccino mixes combine hygroscopic instant coffee with milk powder and sugar — a blend that cakes at the first breath of moisture. The three components reach the hopper with different particle sizes, densities and flow behaviour: fine agglomerated coffee, a fatty creamer or milk powder that coats every surface it touches, and crystalline sugar that tends to settle out of the mix. It is a non-free-flowing powder: it does not level itself in the hopper, it bridges over the outlet, and it carries a static charge that lifts fines into the sealing area.
